Nasi dimasak seperti beriani yang lain tetapi periuknya di kedapkan apabila ianya hampir masak, di gelar “gam”. Dahulukala, adunan tepung sebagai gam tudung periuk, kini proses ini menggunakan kain atau kertas.&lt;br /&gt;&lt;br /&gt;Beriani Gam is a biryani rice dish orginating from India with a cooking method very similar to Hyderabad biryani but with spices adjusted to suit the Malay palate. The rice is cooked as per any other biryani but the pot is sealed when the rice is nearing its full cooking stage, thus being called “gam” or “glued”.
